will this bird be safe?

I am cooking a turkey on Dec 27..


I have ordered a local, organic turkey that will be delivered Dec 24.  It will be approx 20 pounds.  I'm wondering whether it's safe to not freeze the turkey.  Actually, I'm concerned that it won't be possible to fully freeze and fully thaw the bird in those three days anyhow!

 

But, is it safe to leave refrigerated?  To help, I can keep it in our "spare" fridge in the garage that only gets plugged in for receiving monthly co-op orders.  That would keep it at a consistent temp without an opening and closing door.

What do you think?

I would think it would be ok. You def won't be able to freeze and thaw. Maybe keep colder than usual?

It will absolutely be just fine for three days. I use a salted turkey recipe that takes this long to fully salt and rest the bird. And my favorite wet brining recipe takes a full week!

You can hold a fresh turkey for three days. Indeed, one can hold an ungutted woodcock in the fridge for three days. Just keep it cold, around 35-39 F, and dry.
