Salmon Roe

I was thrilled to find salmon roe at our seafood market and bought a 4 oz. jar.  My 2 year old loves to eat it plain.  The 9 month old will eat some and I don't mind a bit. I'm getting tired of eating it plain, though.  Any ideas on how to incorporate it into your diet?  I could do sushi rice, I guess...

We're GF and I'm dairy-free, btw. 

FYI, I tried the salmon roe spread from NT once.  It was awful!  Liquid and way too onion-y.  I was able to make it into a decent creamy pasta sauce (when I could still have dairy), but no one else would eat it.

I use the roe cakes recipe in NT. I make it with almond flour using crispy almonds. I don't make it exactly the same. Both my four year old and two year old love them and they're really good with chocolate milk!
