Ooh, I wanna join ... but I'll start with last night because my memory isn't so hot.

12/5 I had soft tacos (corn tortillas, fish, cilantro, guacamole, pico de gallo), DD had some leftover chicken and broccoli, DH is on travel all this week

12/6 Repeat of above (and loved it so much that I had it the following two days for lunch)

12/7 Omlette with veggies and salsa for me, a quick "pizza" made from flatbread, pasta sauce, cheese and olives for DD

12/8 Oops, ate out at our local diner - DD had mac n' cheese and I had veggie chili

12/9 Broiled fish with bok choy (found when I cleaned out the freezer) and edamame for both of us

 

Planned:

12/10 Veggie soup with stuff in fridge that is on last legs (spinach, potatoes, carrots, squash, maybe some lentils, all topped with sauteed garlic)

12/11 Probably soup leftovers

This is where I've been slacking lately.  We haven't been eating out but we've been doing more convenience foods and less home-cooked stuff and it makes me feel so guilty.  We just moved 2 weeks ago and I'm working and life has gotten a little overwhelming for this single mom and I'm exhausted.  I'm planning on today being a big baking day and I'm getting the food under control again.  I can grocery shop without my kids this evening when they are at their dad's so hopefully I can meal plan before I go and do everything I need to do to give them better food for cheaper.

12/2 tofu curry with brown rice, green beans, salad

12/3 burrito style enchiladas

12/4 pigs in a blanket (applegate farm dogs in homemade dough wraps) with french fries, salad

12/5 goulash - not really goulash, but my MIL hill-billy take on it, green beans, homemade rolls

12/6 leftover "goulash", green bean, rolls

12/7 baked tilapia, cous cous, peas

12/8 baked potatoes with nut yeast sauce, broccoli, boca crumbles, salad, steamed carrots

12/9 leftovers

12/10 DH's holiday party. Not cooking and not spending any money!!

12-4 Bacon bleu cheese burgers, sweet potato fries, broccoli normandy

12-5 Scrambled eggs, hash browns, bacon, toast & jam, pears & bananas

12-6 I don't remember! I know we ate at home though.

12-7 Chinese (my brother treated us)

12-8 Pizza

So, my in-laws bought us pizza last night (terrible I know...but how to say no? :) ...so definitely making that salmon tonight! Not sure about tomorrow yet...grocery shopping will happen either tonight or tomorrow for sure.

I've been without Internet for a couple of days (long story).  Here are the past three nights, if my memory serves me:

 

8: Shepherdess Pie (vegetarian version of a classic)

9: Leftovers

10: Taken out to dinner!

What a fabulous idea!! Going out to eat is our main financial weakness...but I LOVE contests. I guess I'm a little competitive!! :)

 

Tonight: homemade pizza. This is my first attempt, so we'll see how it goes...

Last night: Curry turkey/rice/peas...also got several meals worth of veggie/beef stew in the freezer

Tonight: Rice skillet meal/green salad

Tomorrow: Chili, probably cornbread, and maybe salad.  Making a huge batch to feed the freezer!

 

Monday - don't know, maybe leftovers?

Tuesday - Italian sausage bread - hopefully a double batch, lots of leftovers for nibbles/birth guests/etc

 

No plans past that...hoping to get a batch or two of Christmas cookies made, and some of Aviva Jill Romm's bran muffins...the 11th-hour-pre-baby-nesting bug seems to have hit!

 

Hoping also to get some squash soup and maybe broccoli soup done too...some for the freezer and some to feed veg. midwives/doula.  Depending on when labor starts/how it falls out, hoping to put 'no-hurry vegetable curry' in the crockpot before things get too intense!

tonight we had bean and cheese buritos on homemade tortillas and brussle sprouts sauteed with mushrooms & garlic

 

I'm about to make some mushroom barley soup & throw it in the crockpot for tomorrow, hopefully we"ll have it with a big salad! yum

Still going strong.  We are eating red lentil dal (pantry items) and quinoa and veggies for lunch.  We are working our way through a huge bag of quinoa.  What tasty grain!  I am so glad I bought this and when it is gone, I plan to buy another 5 pound bag.  

 

I did some shopping on Friday.  Bought only veggies, fruit, milk and eggs. 

 

This coming week will include:

 

Grilled chicken, veggies, rice of quinoa

Venison sausage, potatoes, broccoli

Fritatta with onions and peas, and a salad

Rice and dal, cauliflower

Tofu curry with peas, red pepper, basmati rice and maybe a salad if I have any lettuce left

I made a bunch of cookies yesterday for ds1's school Christmas party (and for us) and several loaves of pumpkin bread.  I think I might make some soup and/or mac & cheese for dh and I to eat for lunches this week.

Tonight: lasagna, garlic bread, salad.  Too crazy busy to do my regular roast chicken

Monday: nachos w/ ground chorizo, black beans, salsa, sour cream and guac

Tuesday: ginger/soy salmon with rice and grilled asparagus

Weds: some kind chicken-maybe lemon pepper since I never made that last week

Thursday: we are on the road w/ hockey and such so I will make a cold supper to eat on our way-maybe chicken parm subs w/ the leftovers from Weds

Friday: pizza

Didn't end up with sloppy joes last night since I forgot to thaw the buns.  So we had leftover chicken and potatoes from lunch.  We'll do the sloppy joes tonight.  I need to go to the store today to pick up milk, eggs and fruit.
