Holiday Baking - what are you making? - Page 2

Yummy!  I'm trying to ease down on what I get myself into this year (with the 9 mo baby).

Fig pinwheels are my one 'must have' cookie.

Still trying to figure out some cookie-cutter cookie for dd to decorate (my sister usually does gingerbread, so I try to do something different).

possibly Pfeffernusse - but I'm also thinking about making chocolate gingerbread and/or apple upside-down gingerbread cake (yum!) - but I'm trying not to get too gingerbread heavy (I lean that way myself for xmas desserts though)

I forgot about the cinnamon rolls for Christmas morning!

We make gift baskets for ds's teachers/paras/aides (5 in all) as well as for my mom and dad and for 3 elderly family friends.

Last night we (dp and I) made the dough for m&m cookies, peanut butter cookies and chocolate chocolate chip cookies. We froze them in cookie sized balls and will pull out what we need to bake as we need them. We also made the chocolate pretzel rings. Last week I made cinnamon almonds. Right now I have a raisin cinnamon bread rising. If it works well I might make some mini loaves for our gift baskets. I will also make some cut out sugar cookies, some sort of mini loaves of quick bread (blueberry, maybe), and puppy chow.

I'm going to try to focus on items with lots of dark chocolate & less sugar.  But I also have to make my bon-bons, which are cream cheese, butter and powdered sugar on the inside dipped in melted choc chips & butterscotch chips.  The original recipe calls for maple flavoring inside, but I love experimenting with other flavorings/extracts.  Not sure what it'll be this year.
