I just found a recipe for a single serving brownie made in the microwave with readily available ingredients.  Of course, I doubled it;-)   It is pretty decent if you are desperate for a treat on a Friday night.

Serving suggestion: with vanilla ice cream or chilled cream. Keep topping up with cream as you get to the bottom. I haven’t tried it with chocolate or caramel sauce and nuts but they may be good. Sometimes when I’m really full, I share it with a loved one.

 

INGREDIENTS
  • 2 Tbs vegetable oil

  • 2 Tbs water

  • Few drops vanilla extract

  • A dash salt

  • A pinch instant coffee powder (optional)

  • 3 Tbs granulated sugar

  • 2 Tbs unsweetened cocoa powder

  • 2 Tbs all purpose flour

INSTRUCTIONS
  1. In a 12 oz coffee mug, mix water, oil, salt, vanilla and coffee, if using. Whisk well.
  2. Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.
  3. Microwave for 60-75 seconds: 60 seconds for a molten bottom, 75 for uniformly done. I normally choose 60.
  4. Enjoy with a spoon and a scoop of vanilla ice cream. Careful, brownie will be hot.

ddcc to say that I am so trying this!  Dh and ds are gluten free, so I don't bake much.  Single serve brownie for me sounds just right!

Made this last night with some Stephen Colbert's Americone Dream ice cream.  Mmmm.  The only way it could have been yummier was if it actually had Stephen Colbert on top ... but I digress lol.gif.

I dislike using the microwave BUT tried both this brownie and the salsa egg today and they have changed my life!  LOL!

So glad everyone loves the brownie.   I'm 39 weeks 1 day and have made it so many times this past week, I had to up my acidophilus to avoid a yeast infection!   My sweet tooth this past week has seriously gotten out of control.

 

Toasted crushed nuts on top offers a little variety:-)

I haven't tried the brownie yet (will do soooon!!!)  but I saw this recipe yesterday for chocolate pudding.  I made it just now for my *snack* and added a drop of orange oil...to die for!!  I didn't refrigerate it the way they said...I like warm pudding.

Chocolate Pudding in a Mug

Serves 1
 
 
In the early days of microwave ovens, a recipe like this was always part of the demonstrations given by manufacturers' home economists. It proved how fast and how much fun the microwave could be. It still does.

1   tablespoon cornstarch
     
2 clearpixel.gif tablespoons cocoa powder
     
2   tablespoons sugar

3/4 clearpixel.gif cup milk
     
1/4   teaspoon vanilla extract

    1. In a large mug (at least 12 ounces), dissolve the cornstarch, cocoa, and sugar in the milk.

    2. Microwave on high for 90 seconds, or until mixture boils.

    3. Stir in the vanilla extract.

    4. Chill in the refrigerator at least 1 hour.

Substitutions: Instead of cocoa, use 3 tablespoons chocolate bits. Stir them into the hot pudding with the vanilla. Instead of vanilla, use orange zest, grated or very finely julienned.

Can't wait to try!  I'm loving these single serving desserts.  Not only do I have a low willpower, but I feel like my cravings keep changing.  If I buy a carton of ice cream, I'm over that flavor the next day.
