International themed holiday potluck

Xmas Eve this year has an international theme, we're doing appetizers and desserts only. I'm stumped trying to come w another "healthy" app that meets criteria though. Since i know everybody else will be perfectly happy mainlining sugar, i have to be sure i cover the basics like protein and veggies.

We're each mostly sticking w our heritage. So for me thats Native and Russian. I already have those dishes picked, cranberry fritters and piroshki (meat). But i'm not having any luck w DHs side (Scottish). Or w coming up w any veggie based appropriate (international) finger foods. If i cant come up w anything more interesting, i may just do Vietnamese spring rolls, but thats not very exciting. Oh, and i'm also making baklava per special request.

Suggestions welcomed.

My first thought after reading Russian and Scottish was blini with smoked salmon. Since you want to focus on veggies, how about baby potatoes or potato rounds with a little creme fraiche and smoked salmon garnish?
