Recipe request: quick bread using raisins

So I remembered I over bought raisins at one of those warehouse stores.  I'd like to bake some bread for holiday gifts.  All the recipes I've found require yeast - of which I am terrified.

 

I could pull some recipe from the web but I wanted to have someone tell me it's yummy before I go through the trouble of making it.

here is one omy favorites!

 

  • 2 1/2 cups whole wheat flour
  • 2/3 cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon (can use all spice too!)
  • 1/2 teaspoon salt
  • 3 eggs beaten
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 cups shredded carrots
  • 1/2 cup raisins
  • 1/2 cup chopped pecans

 

Preheat oven to 350

 

In a large mixing bowl, add  the whole wheat flour, sugar, baking powder, baking soda, cinnamon and salt; stir to blend.

In a separate bowl beat together the eggs, vegetable oil and milk.

Add the liquid ingerdients to the dry ingredients and stir just until barely combined. Don't over mix.

Fold in the shredded carrots, pecans and raisins.

Pour the batter into 2 greased loaf pans and bake for about 1 hour, or until a wooden pick or cake tester inserted in center comes out clean.

 

This also makes quite a few mini loaves.  I have doubled, even tripled the recipe for gift giving!
