DH isn't convinced about the benefits of soaking grains

He's very logical and when I told him about what I had been researching, he said he wanted "real" info...not some lady's blog orngtongue.gif

 

So, can anyone help?

Why does he need to be convinced? What is your aim here? Does he do the cooking?

Not like soaking them is going to cause harm...

He doesn't think they're going to cause harm and he doesn't do the cooking.  He just wants "evidence".  I told him I would ask on here, so I'm hoping someone can help

I hope that was enough for him, I don't like to rely on wikipedia but it's hard to find much on phytic acid outside of food blogs!

I have run into stuff here and there, but I think most of the articles were in relation to a specific nutrient and deficiencies caused by excessive intake of phytic acid. In fact, I believe I was just reading article on the NIH website regarding zinc deficiency and phytic acid. Here's some:

check out the book/cookbook nourishing traditions by sally fallon for more info on soaking grains.  very informational and gives recipies too!
