I think this was an Ina Garten recipe. If you don't want the heat of cayenne, then 1 to 2 tsp. of smoked paprika is a nice substitute (or use both):Â

Rosemary Roasted Cashews
1 1/4 lb. roasted, unsalted cashews
2 Tbsp. coarsely chopped fresh rosemary
1/2 tsp. cayenne
2 tsp. dark brown sugar
2 tsp. kosher salt
2 Tbsp melted butter

Bake nuts at 375F for 10 minutes, until warmed through.Â
Mix other ingredients in a bowl.Â
Toss nuts in mixture until coated.Â
Spread on a parchment lined cookie sheet to cool.
Makes 3 cups.Â

Another recipe:Â

3 cups mixed nuts
1 egg whiteÂ
1 Tbsp. orange concentrate
2/3 cup sugar
1 Tbsp orange zest
1 tsp cinnamon
1/2 tsp allspice
Â
Beat egg white with a fork until frothy. Add orange juice, sugar and spices.Â
Pour over nuts and toss together to combine.
Spread out on a parchment lined cookie sheet.Â
Bake at 275F for 25 to 30 minutes or until toasted and crisp, stirring every 10 minutes. Cool.Â
CAREFUL - goes from toasted to burnt sugar quickly.Â
*This is the original recipe that I wrote down, but I usually experiment with it. You can use less sugar, add ginger, cloves or other spices etc.Â
