I've had lots of issues transitioning from cooking for two to one (well me and my DD who's 2.5, but who eats very little) - any other single mamas out there who can recommend useful recipes/strategies for cooking for one. I seem to be putting on weight because I make way too much then eat it all because I hate waste and leftovers never seem to get eaten.
