Freezer burnt bones for stock

Thread Starter

I have had some bones for stock in the freezer for almost a year now.  They weren't in good bags and they are quite freezer burnt.  Are they worth making into stock?  Or will the freezer burn affect the flavor of the stock?

I have used freezer burnt bones for stock.

I tend to use bags for bones that have seen several 'reuse' cycles so sometimes they get a little hole and the bones dry some. I have not found it affected the flavor of the final product, and a little drying out will not affect mineral content.
