Vegan manicotti filling?

My family wants manicotti for Christmas dinner. I don't want all that cheese! Anybody have ideas for a vegan filling? Thanks

I've never tried this recipe, but I keep meaning to....I love Susan V's blog and I have a lot of success trying recipes from her site:

We make a filling by blending MoriNu tofu with some cooked garlic and onion, thawed chopped spinach and herbs. You may need to thin it out a little. Use like you would ricotta.

Those both sound really good, although I probably couldn't get my son to eat eggplant. I think we will go with the tofu/spinach/garlic.  Thanks.
