Jan. 5 Taco Night! So good and love the leftovers.

I'm good so far! We had coffee at Tim Horton's this morning, but only because we had a gift card.
Tonight, I'm going to dinner with a bunch of moms and I already told them that I'm going for company not food. This is mostly because I'm not spending money and I'm counting calories.

Jan. 1. Baked perogies with spinach. 

Jan.2. I had some macaroni and cheese tonight.

Jan. 3. Baked mac and cheese. 

Jan. 4. Lentil Quesadillas

Jan. 5 . I had left overs from last night and then a nice green smoothie, well it was nice and purple b/c it had blueberries in it! Tasty!

Jan. 6. I had left overs again, so lentil quesadillas and a green smoothie! I made sooooo much smoothie that I have like 4 servings it! lol Good thing I love my smoothies!

Yay I cooked at home tonight! Veggie stir fry - very tasty. We should be on track for the rest of the week, as hopefully will continue feeling better.

DH's mama made her mama's famous meat pies for the whole family, and gave me a chicken carcass to stew for the accompanying broth-and-pasta.

Jan 2: breakfast: bagels; lunch & dinner: visiting family who fed us
Jan 3: breakfast: oatmeal w/ berries & brown sugar; lunch: canned soup & bread (not exactly home cooking, but the bread was homemade); dinner: tomato macaroni & cheese, carrot sticks, leftover green beans
Jan 4: breakfast: scrambled eggs, toast, fruit; lunch: leftovers; dinner: pork roast, mashed potatoes, squash, cinnamon rolls
Jan 5: breakfast: fried eggs, toast, sauteed onions, fruit; lunch: leftovers; dinner: mashed potatoes, meat gravy, squash, cauliflower/celery/cherry tomatoes & veggie dip

Jan 6: breakfast: cold cereal (not planned, our morning went poorly!); lunch: lentil soup with bread; dinner, baked beans (from a can, but I'm OK with it) and cheese toast with tomatoes, cauliflower, & celery

Tonight I'm making a birthday dinner for my mother-in-law. I just got a pasta maker so I'm making homemade spaghetti with a salad and homemade dressing. The salad is going to be some cabbage, shredded carrot, kale, and red onion. The dressing is 3/4 c olive oil, 3 tbsp apple cider vinegar, 1 tbsp Bragg's liquid aminos, juice of half a lemon, salt, pepper, and some paprika. I'm not a huge salad fan so I'm hoping it turns out okay...

Breakfast was on a gift card today - coffee, mini doughnuts for the kids (one had an eye dr appt), and a banana for me.
Lunch was italians for the kids, venison with a side of broccoli topped with cheddar cheese for me and DH.
Dinner was whole grain spaghetti and sauce from a jar that I happened to have in the cupboard.

Mamita - if you have tons of green smoothie, you should refrigerate one for the next day and freeze for the third and fourth day of smoothie. They lose nutrition and go bad quickly.

Today and tomorrow I work 12 hour shifts. I made egg/cheese/bacon on english muffins this morning, cucmber/celery/spinach/apple juice for lunch/snacks (2L) and will have what's left of the baked bean quintet for dinner.

How fast do they lose nutrients? I drank all the smoothie from the one night, in one night! LOL It was about 4 glasses of smoothie and I drank it all pretty fast! I'm not sure what I could freeze it either. Breast milk storage bags? hahaha

Jan 6: (was supposed to be beef roast, but it burned in the crockpot) hot dogs

Jan 7: lasagna, garlic bread, broccoli, key lime cheesecake bars for dessert (had company for dinner)

Jan. 7. I just had some pasta with sauce, nothing special at all. but at least I didn't order out. 

Jan.8. I had leftovers from last night that I added a can of crushed tomatoes, garlic and cheese to and then baked.

Jan.9. I made an eggplant tomato casserole today. It's the very first time I've ever bought an eggplant before. It turned out all right, but a little mushy. I'll do it a little differently next time. I have left overs for tomorrow.

Jan. 10. I had leftovers from last night for dinner. For lynch I had New York Fries and a smoothie at the food court b/c I was at the mall with a friend and we treated ourselves.

***Can someone tell me why the heck my posts are all the way to the side?

1/11 - Vegetable Barley stew

1/12 - asparagus & feta pasta

1/13 - dinner @in-laws

1/14 - lentil veggie stew

1/15 - black bean flautas

1/16 - salmon and eggplant

that's the plan....
