Needing meal ideas for my twins birthday

I am planning on having my family, my parents, brother and his wife and their 2 sons, come here on Saturday to help celebrate my twins 2nd birthday.  We don't have big parties.  It's just family except for the 5th birthday, then we invite friends too.

I am stuck on what to serve.  My mom can't have gluten or soy.  She is the only one that has restrictions in her diet.  I would do spaghetti, using rice noodles, but I am making that for their birthday on Thursday as it's one of their favorite meals.  I know that I am putting together a fruit tray with a dip.  Also a big salad.

My brain just doesn't want to work irked.gif orngbiggrin.gif

Help!!

What about a big pot of Chile and some corn bread (is corn bread GF??)

Chicken stew and rice?

Baked beans?

Meatballs, salad and rice?

I would love to make chili, however, we just had white chicken chili at my brothers house last weekend for supper.

Thanks for the ideas!  I will keep those in mind when figuring out what I am making.

My DHs family makes something called Tinga.  It's basically steamed shredded chicken, cooked with onions and chipotle.  They make it spicy, but sometimes they make it without any spiciness (and believe me, I'm a wuss, so I like it without a hint of heat!).  It's really good.. it's served on tostadas on top of a light spreading of sour cream.  We have it for all of our parties- it goes over VERY well.

Maybe roast a chicken and some potatoes?
