Vegan chocolate clusters or cookie recipes?

Anyone have a recipe for a vegan chocolate cluster (I swear I had one w/cocoa, almond slivers, etc but I can't find one now!) or one for soft baked vegan cookies? My oatmeal cookies are crunchy and yummy for me but I need one that can pass tastefully in a non-veg crowd!

I haven't made them, but the other night my friend brought over dark chocolate clusters. She melted dark chocolate and mixed in dried cherries, cashews and coconut, scooped it out onto wax paper and put them in the fridge until they set. Delicious!!!!

I don't know what a cluster is, but you can make something like this in the food processor---soaked dates (remove pits), brazil nuts, and optional dried coconut, optional almond butter scoop, add some cacao powder, and shape into the cookies or cluster.

2/3 cup maple syrup

  • 1/4 cup soy margarine

  • 1/3 cup unsweetened cocoa powder

  • 1 teaspoon ground cinnamon

  • 1/2 cup peanut butter

  • 1 cup rolled oats

  • 1 teaspoon vanilla extract

  •  

  • In a saucepan over medium heat combine the maple syrup, margarine, cocoa and cinnamon. Bring to a boil.  Remove from heat and stir in the peanut butter, rolled oats and vanilla until well blended. Drop by heaping spoonfuls onto waxed paper and chill to set, about 30 minutes.
