I wanted to get your thoughts on flash pasteurization.....particularly for coconut water.

ZICO’s coconut water maintains its amazing nutritional qualities and taste by using a new process called “flash pasteurization”. This protects the nutrition while keeping you safe from foreign substances.

Do you pasteurize this product?
Yes. Our machinery uses a patented method to extract the coconut water then filter and flash pasteurize the water at 120 degrees for two seconds, before packaging it in its aseptic Tetra Pak package. As per FDA guidelines, flash pasteurization is mandatory for bottled beverages. ONLY Tetra Pak stabilizes the coconut water and gives Vita Coco a shelf life of 12 months.

SO these are the answers from Vita Coco and Zico (the 2 brands we drink because A.) they taste good and B.) Amazon does subscribe and save, lol.)

Do you think this really alters the nutritional profile significantly?  Body Ecology has an unpasteurized version, but I bet it is really expensive.  I drink this daily as does DS who *loves* it.
