Baking Bread at High Altitude - Recipes/Tips?

Not sure if this is the correct forum, but I'll try it anyway! I really want to start baking bread at home, we recently moved to the Lake Tahoe area and I am flabbergasted by the costs of bread in the grocery stores here! I can't keep spending almost $5.00 for half loaves of bread, especially if I could just make it myself.

 

We live at 6500 ft. and baking has been problematic for me so far - I made a bunch of Christmas cookies to send back east to family and they all fell flat in the oven. Has anyone baked bread at high altitude before with good results? Especially if you've made GF bread, I'd really love to hear from you!! Thanks so much thumb.gif

We're at about 5400 ft. and I have no luck with traditional recipes.  For mainstream baked goods I rely on a high altitude cookbook called Pie in the Sky (she has tested her recipes at altitudes up to 10,000ft.), everything I have ever tried in that book has looked just like her pictures.

 

 In terms of GF, I am pretty sure Elana's recipes from http://www.elanaspantry.com/category/breads/ are baked at altitude.


I have also had luck with the no-knead bread recipe (Cooks Illustrated version), but I don't do it GF.
