Does anyone have a yummy recipe idea to use up two delicious sweet potatoes that are already baked?
Casserole to use up two large baked sweet potatoes?
Personally, I'd turned them either into a black bean and sweet potato bisque or fluffy mashed sweet potatoes.
For the bisque, you'd scoop the sweet potatoes out of their skins into a saucepan, add a little milk (and ginger, cinnamon, tumeric, and cumin if you like those flavors), and heat gently until hot. Then blend until smooth. In the meantime, saute diced onions, garlic, and black beans, add to the blended bisque, and salt and pepper to flavor, and enjoy.
For the fluffy mashed potatoes, you'd add butter and milk just like making regular mashed potatoes, and heat through.
Another idea that's more of a casserole (though I've never tried it) is to make a shepherd's pie but replace the mashed potato topping with a mashed sweet potato topping.
