Polenta

I need ideas on how to cook it and such. DD is allergic to

 

potatoes

rice (she gets it in small doses tho)

dairy

peanuts

tree nuts

strawberries

blueberries

apples

pork

wheat

grapes

cantelope

tomatoes

She isn't allergic to corn btw. Thanks in advance :]

eggs. shes also allergic to eggs.

I slice it about an inch or a bit less and saute it in olive oil.  You can bake it too, but I prefer it sauteed.  It's good, but it really needs some sort of topping.  We usually do a mushroom sauce or a regular pasta sauce (which obviously wouldn't work for you).  You could do any sort of sauteed veggie topping, really.  Bell peppers would be good. 

 

Fresh homemade polenta is yummier, IMO, and not too hard to make, but the store-bought stuff is good too.  yummy.gif
