What can/should I make in this crock?

While helping my grandma clean out her garage I found a big old crock that she is letting me borrow.  Apparently my grandma's father used it to brew rootbeer when my grandma was a child.  She will be 90 this year, and after some online research I figure this crock was probably made by a local pottery company in the teens, and I don't think my grandma has ever used it so its in great shape.

 

Anyways...it looks like this with a lid.  I think its a five gallon size.  What would you make?  All I can think of is sauerkraut, but I know the world of fermentation is wayyyy bigger than that (plus that would be a lot of sauerkraut!).

Pickles! My mom scours junk stores and garage sales  to find those crocks for her annual orgy of pickle production.

I love pickles.  You can make salt pickles in a crock? 

 

 

My DH is a big pickler, but we usually can them so we can give them for christmas.  If they are made in a crock they cannot be canned, right?  What does one do with that many pickles?

 

We grow our own cukes for pickling, so that would need to be a late summer project.  Cool.

 

Anything else?
