amazing- you can't taste it there at all! And of course I didn't inform them first. Actually my boys would have eaten it anyways not really understanding what liver is and all, but DH would be turned off. I've had and like liver sauted with onions and green apple slices but being pregnant I can't stand onions or even the smell of liver. I almost tossed the meatloaf in a moment of doubt after I whizzed it through the food processor and poured it in- between the smell and appearance. I was soo glad dh wasn't home I think he would have been turned off of meatloaf forever. I guess the cats won't be enjoying it afterall :)

Liver in the meatloaf?! And they gobbled it up!

I used about a 1/4 to a 1/3rd of liver to ground beef. too high a ratio and you might start tasting it. I'd just used a meatloaf recipe my family likes and then I put the liver through the food processor mix it in. I have to say that part wasn't so appealing. I had pork liver on hand from our pigs we butchered this fall- pork liver isn't as strong as beef. for beef liver or anytime you use the liver straight up as it were you can try soaking it in lemon juice or milk for a couple hours or overnight. It will help mild the flavor and to get any extra blood out. I plan on trying in meatballs next and maybe minced up in shepard's pie. I choose to process it cause I wasn't sure if the liver would cook up darker than the beef . I didn't see any darker spots so I'm assuming it doesn't but it's possible it could.
