how to store pb??

I purchased 15 lbs of peanutbutter in bulk.  I just now opened the plastic container.  Can I just close it up and put it back in the basement with the other bulk foods?

I think it depends on whether it's the "natural" peanut butter (which only contains peanuts and salt) or whether it is ordinary commercial peanut butter that has added ingredients. The natural peanut butter should be refrigerated, but I think the other peanut butters are pretty shelf-stable, and should keep well unrefrigerated.

hmmmm - it is just peanuts and salt.  There is pretty much no way I can fit it into my fridge.  I do have a root cellar, think that would be cold enough?

I would think so, but I'm not sure. The main issues with refrigerating natural peanut butter are 1. separation, which is a nuisance but not a health issue, and 2. rancidity. I don't know for sure that root cellar temperature is enough to prevent rancidity-- one of the main things is humidity, too. And there's the issue of aflatoxin, which has to do with a mold that grows on peanuts, I think. I know very little about this.

Would you be comfortable storing roasted peanuts in your root cellar?  (In a bag, obviously)  If so, then I wouldn't have a problem with the PB being in there.

 

And for the record, I never put PB in the fridge.  I grew up with it in the pantry.  And we grew up eating the natural stuff.

When I bought a big tub of almond butter, I divided it into pint-sized mason jars and froze those.  I left a bit of room at the top but I don't remember much/any expansion, and I just got one out and put it in the frig as needed.
