cream at the top is hard in homemade yogurt?

When I make yogurt with raw milk the cream separates, as expected. However, i didn't expect it to get hard and chewy?  I mean, it's delicious, but should it do that?

Yup.  That's what it does, particularly if you're using a wide ferment vessel, and doing a long ferment (I used to use a bowl).  Something with a narrower opening and a shorter ferment will avoid that.  But then the yogurt isn't as good (IMO).  Basically, it's become a step or two past clotted cream, it's just dehydrated.
