Want to try to go GFCF

With my digestive issues, and dd's temper (I'm wondering if it is partly food related), and ds 2 acting some days like he's autistic and others he's fairly outgoing (again, I have to wonder if diet is to blame), I really want to try to cut out gluten and apparently casein isn't good for ds2 because what I've read is that it should be cut too. 

 

The problem is, I don't know what gluten or casein are.  I can't avoid something if I don't know what it is, so can you all give me a good book to read, or maybe a link or website to help me out.  I know that when we ate vegetarian (lasted a whopping 6 months) dd's behavior improved, and my digestive issues werren't as bad.  Now that I think back, we ate mostly fresh veggies, dried fruit, and rice.  For protein we did lentils and occasionally beans.  So I don't know if that was cutting out casein and gluten or not. 

 

Help me out here, give me the beginner's guide to the GFCF diet.

There are obviously hidden sources for both (in processed foods), and I couldn't begin to give you a comprehensive list of gluten-containing grains.  But for most people the main culprit for gluten is wheat.  Bread, flour tortillas, breakfast cereal, pasta, etc.  Casein is a dairy protein, so is found in milk, yogurt, ice cream, cheese, etc.  To cut out both, you're eating pretty much like you said - mostly fruits and veggies with straight protein.

 

I'd suggest checking out the Grain Free/Paleo/Primal thread in the TF forum.  Lots of links to blogs and recipes and ideas, lots of conversation about how to get started and meal planning and the like.  While GFCF and Paleo aren't the exact same thing, the basic premise is the same.

Check out the allergy forum, where the majority of folks might be GF or GFCF even, and there is ample related discussion....there is also a resource guide there in one of the stickies.
