How do you keep them from sticking to the pan? If I just brush some oil on the bottom of the pan will that be enough?

For meatballs, I use parchment paper or a Silpat sheet on my cookie sheets (actually they are jelly roll pans). But I have very old, beat-up cookie sheets, so everything sticks monstrously to them, even if they are well-greased, unless I use parchment or a Silpat.

Thanks! I used parchment paper. They came out well, but they released a lot of fat (I put a cup of grated cheese in them,) which makes me think I might be able to make them without the paper next time, if I grease the pan. Something for me to think about.

I use parchment, too, if I'm using a cookie sheet. If I use cast iron, it's pretty seasoned so I don't need to use anything else with it or under it. I always try to make a whole bunch at one time and freeze extras.

I just oil the pan for chicken or turkey balls, and no fat for beef, they are oily enough.  Especially good to use a nonstick or very well seasoned sheet pan.

I like to make extra too, but I always forget how much we love meatballs in this family...it turns out I didn't make as much extra as I thought!

I make mine with either just beef, or a mixture of beef and pork, so I think they'll be oily enough. Thanks!

I try to make mine a little leaner (mix lean beef and ground turkey), so I use parchment. Works great.
