Spam me some dinner ideas!

I have no idea what to cook for dinner tomorrow and it looks like we are in for yet another snow day! Last snow day I made chili so have that in the freezer and the snow day before that I made stew (and cookies! smile.gif) which I had plelty of leftover as well

 

I have boneless/skinless chicken breasts in the freezer I would like to use center stage but other than that I have lots basics (frozen veggies, pastas, grains, etc) on hand. 

 

Any ideas??

I'd make a pasta primavera with grilled chicken breasts...or a chicken and rice casserole, maybe.

Are you looking for some comfort food type dinners?  If so, I'd make chicken pot pie.  Or some kind of casserole.

 

Sweet and sour chicken and fried rice

Chicken strips and fries (you could make buffalo style ones if you have some Frank's)

 

Ok that's about all I've got.  I'm very imaginative today. :)

Thanks for the ideas, I am feeling so uninspired!! 

 

Since its snowy, cold and a potential snow day I would love some comfort food. I was thinking chicken chili but I make chili all the time.  I like the idea of chicken pot pie or chicken and rice casserole! do you have any killer recipes??

 

I do make chicken pot pie with roasted chicken leftovers and have a pretty basic recipe. Any new twists?

Mine's pretty boring.  I usually do chicken, carrots, potatoes, onions and peas.  All in a white sauce and into a pie crust.

Sound like mine. basic, boring but yummy!

 

I wonder if I added some cumin and maybe some cubed sweet potato?  Do you think that might liven it up?

How about chicken curry, maybe with lentils? That would be a nice use for the cumin and sweet potato you have on hand.

curry could be just the thing.  Another foot of snow last night!  School is closed so we have been cleaning off cars, shoveling.Off to google recipes....
