What are some good vegan cassaroles??

Hi all,

 

I am trying to find some nice tasty vegan cassaroles that don't include the fake cheese and soy. I am trying to reduce the about of cheese I eat. I am making frozen dinners right now for after birth and I realize all the cassaroles are full of cheese and I am tired of it although it taste good. I myself am not a vegeterian but would like to be. My children are vegetarians, we have been raising them like this ever since they started eating, I feel it is healthier but I have had a very hard time comming over fully.

 

Anyways, enough talking..any help would be great.

This was always one of my favorites. There are some more from the same website that look pretty good. Of course, that website is all fat-free foods, but you could add your own fat (olive oil, butter, whatever you like) to any of the recipes.

This is vegan and freezes well. I don't know if it is technically a casserole though. :)

When I make it, I don't bother dividing the broth, just start with the lentils and pearl barley in the broth then add the carrots etc. fifteen minutes later, and sometimes a bit of water if I'm worried it will boil dry.  I also don't add marmite/vegetmite because I never have any.  I do occasionally mix in some nutritional yeast, but not that often, it's good either way.

Maybe not technically a casserole, but chilaquile is yummy! It's better without the cheese, imo.

This Moroccan Casserole sounds pretty good.
