ooh, so glad you started next months thread!  I haven't sat down to plan Feb out yet because that fact that the month is nearing it's end has kind of escaped me.  Thanks!  Mine will be up in a few days :-)

I do my meal planning weekly because it's easier for me : ) 

 

1. Muffin tin quiche with cheese and zucchini

2. Turkey burgers with mushrooms and sliced avocado, french fries and veggies with dip

3. Ordering Indian food/having movie night with friends

4. Breakfast for dinner

5. Chicken with mushrooms and rice

6. Leftovers

7. Tuna melts & homemade soup

I'm going shopping for the majority of the month tomorrow so I'm working on putting mine together right now. I'll have it up soon. We tried quite a few new things last month that didn't go over well so I am doing my best to find more kid friendly recipes that fit my ideals and budget.

Can I have recipes for 1 and 18?

Tamale pie is something I haven't made in a long time, so I am actually going to look up a recipe on the internet tonight! lol I will use lentils most likely and lots of veggies. For the chili macaroni, I use leftover chili, an extra can of tomatoes and add cooked macaroni, then top with nutritional yeast/soy cheese.

I do the weekly planning as well to take advantage of weekly sales at the store.  For the upcoming week we've got:

Monday (tonight): Husband made egg foo young

Tuesday: Dinner with in laws (DD and I have been visiting my family for a week and DH's family would like to see their granddaughter)

Wednesday: Spagetti

Thursday: Lentil Shepards Pie

Friday: Chinese inspired dinner; Hot n' Sour Soup, Chow Mein, Green Beans

Saturday: French Toast

Sunday: Frijoles Charros

This is the first time I've ever planned meals for an entire month. I did a theme-based planning. Monday's are crockpot dinners, Tuesday's are chicken, Wednesday's are pasta, Thursday's are fish, and Friday's are brinner. I'm not planning for Saturdays and Sundays because we always have tons of leftovers to finish and I work 12 hour shifts on the weekends.

3 - Fish 'n' Chips
4 - French Toast, Fruit
7 - Classic Chili

Breakfast for dinner (french toast baked, eggs, hash browns etc)

Well last week we had a couple of adventures thrown at us.  Yesterday we had friends over for dinner so instead of the French Toast I was planning we ended up having Vegetarian Tacos and Polenta-style Corn Casserole done in the slow cooker.  There are a done of left overs in our fridge so we're having that tonight instead of what I had originally planned.

 

This week we've got planned:

Monday: Quinoa Stuffed Portabello Mushrooms, No Knead Bread, and Honey Glazed Carrots

Tuesday: Slow Cooker Chili, Corn Bread, and Salad

Wednesday: Black Bean and Banana over Rice, and Salad

Thursday: Ginger Tofu Stir-Fry on Brown Rice

Friday: Curry Cauliflower Soup, and No Knead Bread

Saturday: Saag with Tofu, Naan, Rice, and Salad

Sunday: Dinner with DH's family

I usually use whole wheat bread flour and activate the yeast first (putting the yeast in warm water with sugar before adding it to the flour).  If you start this in the morning come dinner time you'll have a loaf of warm fresh bread for your family.

This last week has been super crazy since we got our taxes back and treated ourselves to a couple meals out, but this week is back to normal! So this week we have... 1.Grilled steak with avocado sauce and mexican rice 2.Mulligatawny 3. Veggie Quesadillas 4. Homemade meatballs and rice 5.Chicken Teriyaki Sandwiches 6. BBQ Chicken Pizza on pita bread 7. Corned beef and cabbage. I'm so excited for this week!
