Uses for soured raw milk?

I have about three gallons of milk which has been refrigerated, but sitting there for 2-4 weeks so it is beyond the point that I want to drink it.  Are there some recipes you can recommend which could make good use of it?  I'd especially like to make some bread so if anyone has ideas about that, I'd love to know.  Thanks!

We use it for pancakes.  We use the NT recipe.  You could use it for any sort of soaking recipe for grains (like bread).
