We've eaten out only once so far this month and that was a special date night. I blog about what I cook (with links to recipes or the recipe typed out in the blog) almost everyday. Tonight I did not blog about our dinner since I tried a recipe for garlic soup and I cooked it too long and it broke. Still yummy but not pretty. Ah well, that's how it goes.

 

For breakfast I usually have the same thing: yogurt and fruit. Sometimes I have an egg or egg whites, depending what's in the fridge. My son likes more elaborate breakfasts. I used to buy frozen waffles for him but I finally figured out (thanks to this thread, I think) that I could make a batch and freeze the ones he does not eat (which is most) and then stick them in the toaster oven in the morning. He's happy and it is so much cheaper than buying the pre-made frozen ones! Plus he enjoys the mornings that we make pancakes so much! Our lunches tend to be leftovers from dinner the night before.

I think that's the way these challenges usually go. People fall off the wagon or forget to update (like me!). My week got very crazy once I started back to work after being sick, but we're still on the challenge, and I'm trying to keep track. It actually helps me keep track of my groceries as well! I took a chicken out at some point in the past week, but it took forever to thaw, and then I couldn't remember what day I took it out. Looking back at my dinners helped me figure out that it was Tuesday night, LOL!

 

 

2/1: Meatloaf (half ground beef, half turkey bought on killer sale for almost nothing, woohoo!), green salads with feta for all

2/2: Buffalo chicken nuggets and more green salad for all

2/3: Whole roasted chicken with broccoli, but ate lunch out with a friend--only $9 for a great meal with my BFF, but still...

2/4: Ordered dinner in and spent way too much. The girls ended up not going to my parents' after all and DH and I had to cancel our date because DD8 got sick at the last minute, so to cheer everyone up, we got sushi from a new local place. Our fingers are crossed for next weekend though!

2/5: White chicken chili (from the leftover chicken, plus stock), more green salad

2/6: Both girls are sick and didn't want dinner, so DH and I just picked at what was around the house: cheese and apples for me, romaine salad with tuna for him.

2/7: Awesome, incredible chicken noodle soup--the best I've ever made. I think I finally got the broth right, and it was nice and concentrated. Woohoo!

2/8: Homemade nachos for dinner (they were easy and I knew everyone would eat them!)

2/9: Still sick and exhausted and working, so we got Sonic on the way home from veggie box run. Didn't even use a coupon *sigh*

2/10: DH made sancocho (super-hearty stew with short ribs, chicken, ham, chorizo, yucca, batata, corn, grated plantains) for everyone because I was too tired to cook again

2/11: Ham steak and peas for all

2/12: Leftover sancocho for dinner

2/13: Leftover sancocho for lunch, my parents took us all out for dinner

2/14: Take out for Valentine's Day dinner (cheesesteaks, so romantic, LOL!)

2/15: Sticky chicken for dinner

2/16: Grilled cheese on the Foreman grill after gymnastics

2/17: Ate out for lunch (sushi buffet, we'd been promising the kids but then we all got sick and had to put it off for two weeks), DH's mom cooked them dinner and I picked at home

2/18: Burgers at home

2/19: Big salads for DH and me, eggs for the girls

2/20: Spareribs and sauerkraut at a family gathering

2/21: Roasted chicken with salads

 

Planned:

 

2/22: Chicken with mushroom sauce (kind of a marsala, but with white wine)

2/23: Teriyaki sirloin

2/24: White chicken chili with leftover chicken and broth from carcass

2/25: Some kind of seafood, probably salmon

My meal planning's going to get interesting starting this week.  DS1's finishing up his basketball season and starting wrestling this week so we'll be swamped with practices, meets and games.

Yeah, totally understandable- I keep forgetting to update, too. At least this time I'm doing pretty good at cooking at home, though. Last year I was one of the ones who stopped posting because I just couldn't bring myself to post about how much we were eating out! :)

2/3 Take Out

2/4 "Living Room Picnic" Night- Hot dogs with sweet potato fries, on a blanket in the living room :)

2/5-10 ??Don't remember... I know we ate out once

2/11Pizza Party (Homemade pizza while watching movie)

2/12 Chili and Cornbread

2/13 Family BBQ: Steaks, potatoes and garlic bread

2/14 Tacos

2/15 Lunch out w/MIL (planned) and dinner was chili cheese dogs

2/16 Tomato soup with tuna sandwiches

2/17 Chicken sausage served with rice

2/18 Chicken nuggets with sweet potato fries

2/19 Chicken with cheesy rice and broccoli

2/20 BBQ (tri tip with veggies and garlic bread)

2/21 Chicken and rice casserole

I am back and February has been going good.  So far we have only eaten out twice, woohoo!   Once was for sushi and once was for Thai food, neither of which I am good at recreating at home.

 

Breakfast and lunch are always homemade and consist of mostly leftovers. My son loves things like meatballs, pasta, hamburgers in the AM

 

I have been doing a lot more Sunday cooking for weekly meals.  This Sunday I made Irish beef stew, homemade beer bread and roasted a chicken.  The beef stew we had again last night.  The beer bread and chicken have been sandwiches. I set some chicken aside for quesidillas and I am turning the rest of the stew into a beef pot pie.

Jumping back in here... sorry I haven't been on for a couple of weeks but dh had an unexpected lay off and since we use the wireless internet at the campgrounds (while we travel for his job) I was without internet at a moment's notice when he was laid off and we went home. Luckily it was temporary and he's back to work though! Just hoping that sticks for a bit. Definitely was extra incentive to cook at home and not waste money on eating out. I don't have a list of all the meals we ate as my head was spinning from the situation. I used what we had in the cabinets to put together some meals and we bought a few groceries and we spent a few days camping on our 'homestead' property working on it some and grilled most of our food while there. It has totally thrown off any meal plan I had though since I was trying to stretch and use as little as possible. I did order a box from Angel Food Ministries though (pick up is Sat) for next month's groceries and I'm going to start on my meal plan for it. I hope to be able to stay online and be involved next month.

We did go out on 2/16 for $2 burgers & had a great time!

2/17 - ended up to be shreddered chicken with mole sauce made in CP served on tortillas with blackbeans & rice. I went out with some friends for a glass of wine and ended up splitting a sandwich with one of them since I hadn't had time to eat at home.

2/18 Pizza delivery

2/19 spaghetti pie, veggies

2/20 beef stroganoff in the CP

2/21 pbj for ds6, fish sticks & veggies for ds8, I had a leftover omelet that was in the fridge from Sundays bfast, dh bowling night

2/22 out for dinner - planned ahead

2/23 sloppy joes in the CP, sweet potato fries & baked onion rings, fruit

2/24 grilled cheese & tomato soup

2/25 out for dinner - planned ahead

2/26 dh & kids overnight ski trip & I am going to a benefit dinner

2/27 either pork carnitas in CP or chicken pot pie

2/28 leftovers

 

We have eaten out, but only when it was arranged ahead. So, not so bad this month. I am already starting to think about next month. Both my ds's have bdays as well as my FIL. Plus we usually eat out 1-2x with my dad since he likes it and it is a great way to get him out of the house & see him! We will also go out with some neighbors on St pattys day. A local brew pub/restaurant has a really fun family atmosphere and the kids/parents all have a fun evening.

Must admit I would really like to have dinner out this weekend. My DH was away for work last week, is away this week, and will be gone next week. I am tired of doing it all on my own and would like a break from cooking. But really it is not in the budget to eat out. Sigh

2-25 I made my own yogurt! We had it for breakfast today and it was great. We've been invited to a friends for dinner so no cooking but also no spending.

 

I am trying to make as much at home as possible!
