2/1  chili in the crockpot

2/2  leftover chili and a frozen organic impulse buy pizza cause he didn't like the chili last night irked.gif plus carrots

Feb 2nd:

Breakfast- sausage and eggs

Lunch- pasta

Dinner- roast beef,mixed veggies, rice

 

Feb 3rd:

Breakfast- oatmeal

Lunch- scrambled eggs

Dinner- something with ground beef...I'm thinking either tacos or nacho salad

2: Leftover soup with quesadillas
3: Beans, rice, cheese, veggies, salsa bowls
4: White bean & chicken enchiladas
5: Chicken pot pie

2/1: Meatloaf (half ground beef, half turkey bought on killer sale for almost nothing, woohoo!), green salads with feta for all

2/2: Buffalo chicken nuggets and more green salad for all

2/3: Whole roasted chicken with broccoli, but ate lunch out with a friend--only $9 for a great meal with my BFF, but still...

 

Planned:

 

2/4: White chicken chili (from the leftover chicken, plus stock), more green salad

I'd like to join in!  I cook the majority of our meals from scratch anyway due to my son's food allergies, and we never eat out together, though my husband buys most lunches (his treat, so he can get out of the office and chat with friends).

 

2/2

L - Curry with pork, veggies, and basmati rice (cheated and used a jar of simmer sauce)

D - Roasted chicken leg quarters with herbs, stuffing, baked sweet potato

 

2/3

B - Cereal and bananas

L - Leftover chicken and potatoes

D - Pad thai

 

2/4

B - Banana bread with dried fruit

L - Potato, turnip, and leak soup

D - Will be ham, mashed potatoes and gravy, peas

Well, I hate to have to admit to caving this early in the month, but yesterday was a pretty miserable day, so I was easily convinced when DH offered to pick something up on his way home from work redface.gif

If you right click in the quote box, then select "remove div" a couple times it removes the quote box. The first time, it removes the outer box, the second time, it removes the inner box. I don't know if there's an easier way, but that's the only way I've figured out so far. I just copy and paste from my previous posts, it seems easier.

Right now I've got a chicken cooking and I'm drooooooling from the smell! Anywho, tonight I'm going to make enchiladas with it. smile.gif

2/4: Ordered dinner in and spent way too much. The girls ended up not going to my parents' after all and DH and I had to cancel our date because DD8 got sick at the last minute, so to cheer everyone up, we got sushi from a new local place. Our fingers are crossed for next weekend though!

We had chili and corn bread for dinner, the chili was a little too spicy (DH made it), so my little kiddos had left over mac and cheese.  Lunch was peanut butter and honey sandwiches with apple sauce for the kiddos.  I had a baked potato with sour cream.

We ate out last night for my birthday so that's one eat out night for this month. Not great but I'm not too upset since it was a special occasion.

 

Tonight is spaghetti. Not my normal spaghetti but I used up a can of sloppy joe mix I somehow had and wasn't using so that was a bonus. If there are any leftovers I may make it into a veggie soup tomorrow night. I have to figure out something else to make for tomorrow night regardless and something that definitely has leftovers. I have to go to a funeral Sunday and it's going to require a little travel so dh will be on his own Sunday night unless I leave leftovers. I guess it looks like me and the kids will be eating out though. irked.gif I can't take my own vehicle so we're going to be stuck riding with mom. Maybe I can work something out though.

Can I just say I'm pretty proud of myself tonight? I was super exhausted and did not feel like cooking (also wasn't thrilled about having to clean up after!). Then I remembered how much fun it was to have a living room picnic when I was a kid, and we had hot dogs and sweet potato fries in the freezer. I didn't have any hot dog buns, but I had some burger buns leftover, so we just used those. A tad awkward, but it worked. And it was way cheaper and healthier than eating out!

      D: Take Out

2/4 L: Chicken and rice soup

      D: "Living Room Picnic" Night- Hot dogs with sweet potato fries, on a blanket in the living room :)

2-4 Spaghetti with Meatballs (homemade sauce and meatballs of course)

I won't be cooking on the weekends due to my work schedule. I'll be eating leftovers and the kids will be eating what DH and the babysitter make for them.
