Ah, thanks, but DD8 ended up spiking a fever at the last minute, and all our plans fell apart *sigh* The girls were totally devastated (they adore my parents and love sleeping over), so we ended up getting sushi to cheer them up. So no date with DH and no cleaning time this morning--what a bummer! Hopefully DD5 doesn't come down with it so they can go next weekend instead!

Whew this month is flying! My goal is the same as last month - focus on dinners at home only eating out if it was planned ahead. 

 

2/1 leftovers

2/2 buffalo chicken wings, roasted potatoes, carrotts & broccoli

2/3 black bean casserole, chicken nuggetts, sweet potato fries

2/4 ordered pizza - planned

2/5 pasta with bell peppers & goat cheese, garlic bread, garlic lemon green beans

2/6 friends house for a super bowl party

Today, crock pot chicken and roasted veggies (turnips, potatoes, carrots, and onions) and rice.  Aple sauce for the two kiddos who hated roasted veggies.

Lunch was home made veggie pizza and carrot sticks.

2/1: Meatloaf (half ground beef, half turkey bought on killer sale for almost nothing, woohoo!), green salads with feta for all

2/2: Buffalo chicken nuggets and more green salad for all

2/3: Whole roasted chicken with broccoli, but ate lunch out with a friend--only $9 for a great meal with my BFF, but still...

2/4: Ordered dinner in and spent way too much. The girls ended up not going to my parents' after all and DH and I had to cancel our date because DD8 got sick at the last minute, so to cheer everyone up, we got sushi from a new local place. Our fingers are crossed for next weekend though!

2/5: White chicken chili (from the leftover chicken, plus stock), more green salad

 

Planned:

 

I have no idea! Need to sit down today and think about what I have and how I can use it.

I'm new here, too. Let's see what I can remember:

 

2/3: Baked potatoes with cheese or hummus and salad

2/4: Tofu and broccoli with rice and peanut sauce

2/5: Black beans in coconut milk with cous cous and corn bread

 

One place we really blow the food budget is when something unexpected happens and we can't cook and end up ordering out. So now I try to keep a few simple things on hand in case that happens. We have a bread machine that can make pizza dough in 45 minutes, so I try to always have flour, olive oil, mozzarella cheese, and canned tomatoes on hand for those too tired/sick/busy to put together a meal evenings. Add a potato or sweet potato, and there's fries. Not the healthiest, but it's cheap, quick, and easy and everyone will eat it.

Today, I had a bagel with cream cheese and an orange for dinner.  It was my first day back at work since I had my youngest.  I put a pot roast with potatoes, carrots, parsnips in the crock pot when I left at 615 am so DH and the kids had a decent supper.  The baby had pumped breast milk.

2-3 Fish 'n' Chips (made with haddock and Maine potatoes) - this was a HUGE hit with the kids
2-4 Spaghetti with Meatballs (homemade sauce and meatballs of course)
2-5 Leftovers
2-6 Dinner on DH (benefits of working in the food industry)
2-7 Chili is in the crockpot

2/7 French toast, scrambled eggs, and canned peaches for supper.  Lunch was grilled cheese and tomato soup.  Breakfast was yogurt with dried fruit and sun flower seeds for me and the big kids and little kiddo had yogurt and bananas.

I've been lurking for a while but I would like to join the fun! I cook almost all our meals. Sometimes my husband cooks (not often though!), sometimes we eat dinner at a friend's house, and now-and-then we do eat out (but that is going to have to happen less often). I have been keeping a dinner blog for about a month now. Lots of photos and recipes (and links to recipes online)! I'd love to see photos and recipes from other cook-at-homers. Tasnima's Table
