Confusion - Soaking sesame seeds

HI all,

I'm new to all this, how do you soak sesame seeds?  I'm not sure to do it with salt or acid.  And then afterward, how do i dry it out?

And another question, does cooking destroy all the good stuff in it?  Because I'm planning on making sesame cookies.  would it even benefit it to soak it, if I'm just going to cook it?

I would soak seeds of any type in salt, because acid can make the outer "skin" tough. The soaking decreases the phytates, and this effect is not changed by cooking so yes, it is still worthwhile to do it even if you plan to cook the seeds.
