Mmmmm Gator-mom. I may have to steal some of your ideas!

 

Tonight we had creamy broccoli soup (vegan) with grilled "cheese" sandwiches. I tried Daiya for the first time and it's pretty good. I don't normally bother with fake cheese, b/c it just tastes too weird, but I thought I'd give the Daiya a whirl since I kept hearing how good it was. It does melt very nicely, but it is still reminicent of Kraft singles instead of real cheese.

 

Tomorrow I was thinking of making some sort of salad with some leftover white beans I have and the dreaded CSA cauliflower.  I'm thinking I'll lightly steam the cauli and then toss it the beans, parsley, and red onion with some vinegrette. Sometimes these off-the-cuff creations works out really well, and sometimes not so much. 

 

I still have a bunch of collard greens to use this week, that's another CSA pick that is getting old. I'd much rather have kale.

homemade bread and freezer soup

This week. . .

 

Monday--white bean salad, turned out really yummy!

 

Tuesday--okay, seriously, mom-brain wins again. I cannot for the life of me remember what I cooked a mere two nights ago. I guess it wasn't memorable!

 

Wed--bean burrito (DH gone)

Fri--"beef" stew and homemade bread

 

My mom is visiting next week and she is gluten free, so looks like we'll be challenge cooking. Haha. Vegan and gluten free.  Actually it's always surprising how much tasty food you can make with those restrictions.

 

CSA box is getting boring this time of year. I can't wait for the new spring crops!

Today I've got some pinto beans cooking. We've all got a cold, and I'm leaning toward a hot, garlicky frijoles de la olla soup and fresh tortillas with some sort of veggie side. Maybe the last of the winter squash, that's always yummy with Mexican flavors.

 

Tuesday is always white bean and kale soup.

 

Wednesday I think I'm going to make a veggie stir fry with tofu, asparagus, broccoli, cabbage, carrot, and snap peas, and a homemade teriyaki-type sauce.

 

Thursday and Friday I'm going to be out of town.

 

Saturday's all about the pasta 'alfredo' with fresh veggies.

 

Actually, other than the pasta, all of that is GF, and if you got GF pasta, that would work too! Just serve polenta instead of bread with the white bean soup.

Today I finally did what I always say I will and I prepped dinner during ds nap. Yay for me!  LOL  I'm making the MDC special of baked lentils and gonna serve that with quinoa and sautee some collard greens on the side

 

My meal planning has been sorely lacking lately, but we've been busy with company and travel and such.  I hope to get back to some more regular meal planning now!  

 

I haven't tried these yet, but I found a recipe for vegan scones that looks delicious so I thought I'd share the link :)  http://www.wouldrathergather.com/allrecipes/pumpkin-spice-scones-with-maple-glaze/  she has a bunch of vegan (or at least dairy free) recipes that look good actually. .

We're gluten-free vegetarians who have begun eating dairy-free during the week. I'm always looking for inspiration!

 

This week we've had:  

 

-spicy veggie stir-fry (playing with Chinese chili garlic sauce - new ingredient for me) over coconut jasmine rice

 

-roasted eggplant-pesto pasta (brown rice pasta)

 

-fried eggs w/hot sauce on toast w/tater tots (no-time-to-cook night!)

 

-tofu yellow curry over brown rice

 

 

Thanks to this thread I am now craving cauliflower. We live where it's still very cold (snow on the ground) and I can't wait until it's CSA time again!

kismetbaby~With your cauliflower you can make cauliflower mashed "potatoes." It's one of the few things from the SBD that I actually remember...basically just steam your cauliflower then blend the beejeezus out of it in a food processor/blender and add butter, milk (non-dairy if that's how you roll), salt & pepper....they actually taste remarkably similar to mashed potatoes, enough to fool my uber-picky, mashed potato loving dd.

 

Even though I can't cook right now (I'm in Iraq) I alway read these threads so i can stock up on ideas for yummy meals once I'm home. I love some of the stuff you guys come up with!

Tonight was onions, peppers and sausage over pasta with EVOO and nutritional yeast sauce and a beautiful green salad with locally grown lettuce .

Making roasted sweet potatoes, green apple and sliced almonds over couscous with steamed broccoli tonight..but think it may be one of the last good meals for a few days as we are running low on food supplies and also at the bottom of what's left of the grocery money!

Catnip-Have you posted your white bean and kale soup before?  I thought I have seen it?  I have alot of swiss chard would that work too?  Got a huge one from the market

last week.  Love your recipes.

Hey there! :)  The mashed cauliflower idea is a good one, I've had someone else recommend it, but haven't tried it yet. Will do!

 

We have had a nice little shift in our CSA box as spring crops are now on there way here. Let's see, what did I cook the rest of last week. . .

 

ww pasta and broccoli with a cashew cream and basil sauce I made in the Vitamix

 

brown rice and mushroom casserole with side of roasted asparagus.

 

Sauteed swiss chard and onions w/ some leftover lentils mixed in, served over quinoa with side of roasted beets and yams.

 

Yesterday was take-out day and we had yummy Persian food.  

 

Tonight I'll be making a raw kale and beet salad and eating it with the leftover rice casserole.

 

. . .and of course still chasing that elusive meal-planning chore for next weeks meals.  I always seem to find time to bake treats, but not plan dinners. whoopsie ;)

Thanks, I'll try it next time.  Ended up doing this recipe.  It was one of the best soups ever.
