Looking for ideas to flavor baked goods and sweets

Both my kids and I have a number of intolerances and allergies.  We recently did the ALCAT testing for the boys (I did it for myself a couple years ago).  DS1 came up with a very different list of foods that bother him (DS2's is very similar to mine).  I'm trying very hard to figure out how to make him snacks, ie "treats" to take to preschool.  Especially for parties when his friends are eating things like brownies and cupcakes.

 

Things that are off-limits are,

wheat

vanilla

cocoa/chocolate

tapioca

flax

citrus (especially lemon and lime)

peanuts (and he doesn't really like tree nuts)

Maple

milks from cows/sheep/milk

I'm sure I'm leaving out some relevant items

 

He doesn't like rice krispy type items, I've made several variations.  I'm planning on trying to make some carob chip cookies, but vanilla is so prevalent, it's really tough to find stuff without it.

 

I'm also trying to figure out how to "flavor" cupcakes and frosting type items without vanilla, chocolate or almond extract.

 

I'm not even trying to make them family friendly, just stuff for him.  Corn is out for DS2, but wheat is fine and sugars are out for me.

He can have eggs and soy? If he can have eggs that's plenty of gluten free products you can make without tapioca or flax. I use different kinds of honey, fruits and herbs(lavender, Rosemary etc) to impart various flavours. Some grains like teff also impart a stronger flavour. You can play around with these to see what he likes. You can replace milk with soy milk, rice milk or coconut milk. Each will change the final texture of the product in its own way slightly.

you could do a spice cake with ginger and cinnamon. pineapple juice would be good as a liquid.
