Dh brewed 8 days ago, and the spent grains have been wrapped in cheesecloth in a bowl covered with saran in fridge ever since then. How do I know whether or not they are still OK to bake with?

Eight days seems like kind of a long time but how do they smell?  Any funk?

they smell ok, but I keep hesitating because of the length of time and then more time goes by. Maybe I'll just toss...

I don't think you want to use those for baking with. They won't really have any starch or gluten or good stuff left, they're really just cellulose hulls. There's nothing of real worth left in the grains after they've been properly mashed.
