Bulk Cooking/OAM Cooking of Cinnamon Apples--Help/Need Advice

Hi Everybody:

 

My cousin needs to make a bunch of cinnamon apples to feed 200 people for Thursday.  She was wondering if she could make them this weekend and freeze them--but worries that they might be mushy.

 

Anybody have any ideas?

She's right that they'll be mushy.  No suggestions other than canning them, which seems like an awful lot of effort to preserve them for only a few days.
