how long does tallow stay good in the refrigerator?

In the comments, someone says that they stored their fat in the fridge for 6 months without rancidity.

Wow that's a fabulous idea! Mine is already frozen though I didn't render it myself I bought it already frozen.

I just rendered a gallon and half and it is in the freezer. Last time I made it, I put a jar on the basement shelf and it was fine several months later when I used it. It was fine except that there was a little moisture that settled to the bottom and I gave that to my dog.

I'm at the bottom of a container I bought from a farmer 8 months ago and it's fine, having been stored in the fridge.

This is off topic but I'm loving how you can purchase the back to basics series seperately  but wondering If theres way to tell what's in each issue? For ex: Series 5 is what??
