Ideas for independant activites for preschooler?

I started a new exercise class and ds is allowed to come with me.  They have a couch/table area where he can hang out and I can see him/he can see me so its a pretty cool set up.  Its at 8:30am, which means he would wake up, eat and we'd head over there, and morning time is the best time for him as far as doing learning activites (we would go from the exercise place to a science class one day a week, and story time a different day a week, the other 3 days we would go right home after)

I'm looking for homeschool activites he can work on 100% independantly (I could give him instruction before my class starts, but dont want to be running back and forth giving him directions).   I was thinking of putting activites in seperate baggies and he can pull them out one by one to do them - for example some lacing beads and string, or a couple pages of the Kumon cutting book and a pair of sisors, etc.

He does fine working independantly if he is told to sit somewhere and work on XYZ.  And he enjoys worksheets and things like that, but I dont want it to ALL be that (and needs to be ones I wouldnt have to read him the directions on, he is reading on his own, but not well enough to read directions).

The class is only around 45min so not too long.

ETA: he is 3.5, but most of the work I do with him comes from kindergarden level material

We do activity bags (i use those pencil bags).  Each one has a coloring sheet and worksheet.  Some of our favorite include:

counting frogs- I have small frogs and sheets with the numbers on them.  DD puts the correct number of frogs.

Sequencing and classification cards

Dry erase handwriting activity- From Priddy books I believe

Google workboxes.  You'll get lots of ideas!
