Need vegan pizza ideas..

It seems my 3yo has all of a sudden developed a lactose intolerance.  He is turning 4 next week and he wanted to have a "pizza" party next week.  This was the plan before he started having lactose problems.  I have no problem with making vegan pizza, but what do you do for a kid who absolutely loves plain old cheese pizza and wants "no vegetables"?

 I am wondering if any of you mamas have some wonder pesto's/ pastes that I could put on that would appeal to a preschooler who has an aversion to green things?  What does your vegan preschooler like on his/hers?

Would you be willing to use a vegan cheese substitute?  Daiya makes really good "cheese", in both cheddar and mozzarella styles.  It is hands down the best vegan cheese sub I have ever had.

 

If you'd rather use something homemade or more whole foods based, how about making cashew "cheese" sprinkles?  A veg*n restaurant near me makes them and they are fab.  My picky DD who can't do dairy will gladly eat a pizza topped with it.  I don't know the exact recipe, but my guess is it's ground cashews, garlic, nutritional yeast, and salt.  I think they either bake it or dehydrate it a bit after processing it.  It should be the consistency of parmesan cheese, but it does not melt when baked/cooked.

I second the daiya idea.  If you want you can make a little english muffin pizza ahead of time so you and your son can try it to see if you like it before commiting to a whol epizza for a party.  Daiya is really good.  I am not even a fan of vegan premade cheeses and I love that stuff.

Ok, I guess I need to check Daiya out!  I have had like 5 recommendations for that now :)  I also found some recipes for a "cheezy" sauce on another vegan pizza thread with nutritional yeast, Earth Balance butter, onions, garlic and salt too..so I will experiment with that too.  I got some flat bread that I've used for personal pizza's before.  I think I'll try that, and then try to sneak some veggies into a sauce and puree, and see if he takes to that...  I have a week to figure out what would be an acceptable replacement :)

Thirding the Daiya suggestion. Just be careful not to over-do it. Use no more than half as much as you would milk cheese.
