Soaked Beans Too Long?

Thread Starter

I soaked some beans for about 10 or 11 hours. I didn't have time to cook them, so I drained and rinsed them. I put them in the fridge for about nine hours (without water). They are on the stove cooking right now. Are they going to be safe to eat?

Thanks so much. :)

Oh, they will be fine. Many cultures ferment their beans.

I soak my beans sometimes up to three days because I want them to sprout. They get drained and rinsed each day, or more if it's summertime & warm in the house. Even if they develop a bit of a stinky smell, just rinse them well & cook in fresh water and they turn out fine.
