What to cook?!!!

My son has problems processing dairy soy and eggs and was told now to take out gluten to heal his gut or it will be a long road.

 

My problem is recipes! Most gluten free I see has eggs in it. I can sub with flax but I was hoping to get some help on recipes for my LO to snack on and dinners! 

 

Thank you. I am sooo glad I was referred here as I struggle with many day to day things as food is what we do all day every day.

Who suggested taking out gluten and why?

 

What are you looking for?  We use Cherrybrook Kitchen for pancakes/waffles.  I make my own bread crumbs out of rice crackers and Mary's Gone Crackers for breading things like chicken and pork chops.  We use rice Chex for 101 uses.

 

If you let me know more of what you are looking for, maybe I can help.  We can't do those things either so I have some ideas :)

Oh awesome! Ya I am looking for an easy bread and waffle recipe and cracker recipe. 

 

What do you snack on? I'm not much the issue but Ethan is pickey with veggies and such.

 

Do you do lots of veggies and meat for dinner?

I haven't tried a ton of breads. I was using one that had a "made in the same facility" statement for nuts without a problem but they don't do sandwiches much so I freeze it so I can take a slice or two out when I need it. 

 

King Arthur-  Top 8 free and GF

 

Chocolate cake- Kids LOVE it!  Used Ener-G egg replacer

GF Flour blend- I have used it several times and like it. You do need to add xanthum (sp) gum to it.

Bread Mixes- have some but haven't used them.

Pizza dough- Great!  Have tried several and DH and I even like it (but it's $$$ so we don't eat it ;)  Use Ener-G egg replacer.

 

 

1-2-3-Gluten Free

 

Has alternative recipes on the boxes!  (Some are inside to be careful when opening)  Have only tried 1 and can't remember what it was but it was good.

 

 

Mary's Gone Crackers-  Crackers and "Pretzels".  If you like crispy chips (ya know, the little bit burnt ones?) then these are great.  Kids eat them but I also use them (along with rice crackers) to make breading for meats.

 

Chex- Rice chex (we are corn allergic).  Lot's of uses.  Big one....Monkey Much.  That is our allergy free version of Muddy Buddies they have a recipe for on the back.

 

Yes, we do a lot of chicken fingers (home made) and veggies around here.  Rice cakes with Sunbutter.  Crackers with hummus/white bean dip.  Carrots and dip.  Stuff like that.

Wow you have really helped! Again, I know nothing so this is great :)

 

Instead of Ener-G have you ever used flax meal for egg? I have it but have never tried it. 

 

Do you hand make anything?

We've only been GF for about 9 months now and with our allergy list, it was tough to get started. I didn't start trying to make my own stuff till recently.  Ii do make a pretty mean Sunbutter cookie an have tried a few cakes (wacky) cakes.  I am not 100% sold on any of the cakes I have tried yet though.  Because of all our other allergies, it is hard to find flours that are safe for us and when I do find them, they are $ because of shipping.

I just saw a raw cake that looks yummy! Thought I would share :)


Idk how the allergies but its super easy! 

 

It 3 cu walnuts

20 dates

2/3 cu cocoa powder

1tsp vanilla

1/4 tsp salt

 

Blend nut and salt to little bigger than salt-lumpy

add the rest and blend til dough forms.

 

Form into cake shape or put in cake mold and you have yourself a cake!

This will prob be his bday cake! :] with some raw frosting I found online.

Up in the resources, there are links to recipe threads. I have recipes in my blog (as many of the mothers here do). I use flax or chia as an egg replacer. For flax, use 1 Tbs. ground flax + 3 Tbs. water and microwave on high for 1 minute. It turns into goo. For chia seeds, use half that amount of seeds, same amount of water. Either one can also be done in the blender. We can't use the regular egg replacers because of other ingredients. While you're avoiding, you might want to look into gut healing and probiotics as well.
