Anyone got a good vegan recipe for a non-vegan potluck?

  I'm going to a potluck with a bunch of moms and my girl and I are the only vegetarians... so I'm looking for a recipe that meat-eaters will enjoy. Something that doesn't scream, "I'M VEGAN!"

  We don't eat much fake-meat, anyone have any ideas?

i love all the cookbooks by isa chandra. vegan with a vengeance, veganomicon (more bon appetite) vegan brunch (fun---the coffee cake is wonderful) vegan cupcakes take over the world

i also love get it ripe and feeding the whole family has some really yummy salads etc.

 

but if you don't want to scream that you're vegan or crunchy (not sure where your line is. grain salads? tofu quiche?) you might as well make cupcakes. b/c that's the thing that wins people over easily.

I think you're always safe with a hearty "salsa" (corn, avacados, tomatoes,black beans, onions, spices) or pasta salad (pastas, various peppers...).

Vegan lasagna?

Chips and salsa or baked goods are always a hit too

My go-to main dish recipe was always mujadarah with lots and LOTS of caramelized onions and good olive oil.

 

My go to dessert was crazy cake made with strong coffee instead of water.

Tortilla Soup

He calls it Spicy Tortilla Soup. I don't add chiles so it's not spicy when I make it. My 2 year old loves it. I also don't add the tortilla strips so it's a really thin broth, though it tastes yummy either way. I add frozen corn and use a 15 ounce can of black beans. I used to add a can of diced tomatoes, but that altered the taste too much. Now I seed a couple roma tomatoes and chop the shell and add them. You can really customize what you add and it is so yummy.

 

It's also really easy to make.
