What brand of chocolate do you use?

I'm looking for a casein-free, soy free dark chocolate to use for snacking and baking....We're going to start DD on GFCF this spring, and I need to find some suitable chocolate.

Lindt 70-90% Dark Chocolate- 85% is my fav- it is the lowest in sugar/carbs. It is tasty and fairly easy to find , even a lot of the fancier brands have soy lecithin in them.

I second the Lindt 85% if you like dark chocolate. It is awesome and no soy lecithin. Ingredients: Chocolate, cocoa powder, cocoa butter, sugar, natural bourbon vanilla beans,   However it does say may contain traces of peanuts/tree nuts/soybean/milk if that is a concern for you.

the 90 % is pretty dark and my dd 3yrs old will only go as high as 72% but my 20 moth ds will eat 90% no problem. I love the dark so much I can't go back.

I use Equal Exchange's Very Dark Chocolate. It's only 71%, but it's organic, fair trade, and doesn't have casein or soy in it.

 

It makes fabulous ganache!

I'm so dissapointed! I went to the store this morning--they have Lindt 70% (or is it 72?), 85%, and 90%...the 70% had a label saying "New Recipe" and sure enough, it now has soy lecithin! :(

 

The 85% and 90% are still soy-free, though. I got the 85%...It's pretty dark--I'm not sure my 5 year old will go for it.

I will keep that in mind about the Lindt- 72- I usually use the 85 though. 

 

fwiw all the Ghirardhelli here has soy in it.

 Yeah, I read labels on Ghiardhelli, Green & Black's, and Godiva--all soy. :(
