Does anyone make food with grains

I am doing a local food challenge and trying to eat more local foods. I will be buying oats, rye, wheat and barley. I want to make tortillas, pasta noodles, bread, pancakes, waffles, treats like cookies and cakes, granola bars, chips from the tortillas and crackers instead of buying them at the store. I hoping to take time on the weekend to make a bunch of stuff then freeze it. Does making these things on your own take a lot of time? I have a blend tech and will get things like tortilla presses to help.

Yes, they do take a lot more time.

I only buy local wheat. I guess it depends on how quickly you can grind. I have the kitchenaid attachment for grinding. I was making bread yesterday and it took an hour and a half to grind 9 cups of flour. I still use store bought masa to make tortillas. I do have a tortilla press and it only takes about 20 or 30 minutes for me to make fresh tortillas.
