A lot of eating out over a span of a couple days: yesterday got the girls lunch while out shopping (on the plus side financially, got most of their clothes at a thrift shop), ate dinner out with DH (gift certificate, so spent $5), will have lunch today w/ sister and mom (planned a while ago), then dinner out tomorrow (planned girls' night w/friends). Back on track this week!

3/1 family dinner out to help celebrate good friend's birthday
3/2 bb & sweet potato chili
3/3 family dinner out with grandpa
3/4 coconut shrimp, maple glazed squash, roasted asparagus
3/5 couple's dinner out with friends
3/6 pasta with pancetta, roasted cauliflower w/paremesan
Â
Please don't kick me off this thread! I do see that we will be eating dinner out 3x this week. BUT, they have been planned for some time now. Next week will be better!
My week in review: Pretty much stuck to the plan. Moved the pasta with pancetta to 3/4 and served it with roasted asparagus and some toasted semolina bread. Never got around to making the coconut shrimp, maple glazed squash or roasted cauliflower. Should fit them in next week. Broke down last night & picked up italian beef & hot dog for ds & dh. I was heading out to a friends house for dinner and was running late.
Â
Â
Â
Next weeks menu:
Â
3/7 baked chicken with buffalo sauce, baked sweet potato, caesar salad
3/8 mexican casserole, green salad with ranch dressing
3/9 slow cooker pulled pork with carmelized onions, coleslaw, maple glazed squash
3/10 dinner at IL's house
3/11 pulled pork torta (sides TBD - based on fridge clean out)
3/12 some sort of seafood (actual menu TBD)
3/13 Irish stew, bread, fruit
Â
Really starting to look again at how often we eat red meat. We tend to lean toward it, so I am trying to be sure to mix it up enough during the week. Working to add more fish to our diet as well. Not my favorite, but the rest of the family loves it. Next week we will be eating out several times (planned). Trying to keep things at home all week.
