3/5 Family BBQ- Burgers, salad

3/6 Spaghetti, french bread (homemade!)

3/7 Chili and cornbread

3/8 Chicken nuggets and sweet potato fries- not a homemade meal, sadly, both were purchased ready made from the freezer section. But, that's still way better than eating out, and it's finals this week and next, so I'm super short on time these days!

3-1 pancakes (and eggs after wrestling practice )

3-2 steak, pasta

3-3 baked trout, roasted veggies alfredo, garlic bread, roasted veggies; kids had pancakes and the usual egg sandwich after wrestling

3-4 pizza night

3-5 paninis, onion rings

3-6 potato soup, fresh bread; panini's again for the kids (they LOVE them so it's not exactly a punishment!

3-7 dinner at my mom's tonight *out for lunch 

3-8 french toast, leftovers for dh and I; egg sandwich

3-9 spaghetti, hamburger casserole, no knead bread, broccoli 

3-10 hamburgers, baked fries, carrots

Back on track!

 

Meals for the next few days:

 

* Lemon pasta (yesterday) w/ carrots & cukes

* Veggie bibimbap (rice, veg & egg with spicy sauce)

* Pasta w/ peas

* Tortilla soup and quesadillas

* Probably stir-fry & tofu w/ rice

 

Planning on making my grocery purchase yesterday ($130) last until the 15th to see if we can do mostly veggie meals and cut down from $200/wk.

3/1 - coconut curry rice (had lots of garbanzo beans and veggies in it...wasn't just rice!), broccoli

3/2 - tempeh burgers w/ spuds (all homemade)

3/3 - homemade pizza

3/4 - general tao's tofu, brown basmati, broccoli 

3/5 - tempeh fajitas

3/6 - fend for yourself night.

3/7 - Soupy beans and tortillas 

3/8 - Homemade pizza w/ tempeh sausage and olived :)

3/9 - tempeh helper. that's it. I'm lazy today!

3/10 - oven roasted tom tofu, gravy, potatoes, green beans (this is the FOURTH time I planned this meal - I'm finally making it, lol!)

Ended up with meatloaf again tonight, it was so good the second loaf never made it the freezer! In case anyone is interested this was the recipe however keep in mind I never measure anything so this is all estimates.

 

1 lb lean ground beef

1 heaping cup pureed black beans (cooked)

1/4 cup ketchup (homemade)

1 tbs horseradish (jarred)

1/4 cup diced onions

2 garlic cloves, minced

1/4 cup shredded sharp cheddar

1 cup old fashioned oats

2 tbs "taco seasoning" (i make my own)

skim milk as needed

s/p to taste

 

mix beef thru garlic ingredients together, add oats, cheese and seasonings, blend by hand. If too dry add milk, too wet add more oats. Form inot a 2 mini loaves or one large oaf and bake at 375 until done. Yummy!

03/10- Oatmeal, banana for DD *** Went out to do errands early and forgot to eat breakfast! Was seduced and got a biscuit from Bojangles...It was NOT what I remembered...wasn't worth it!

- hotdog and granola bar for DD, I forgot to eat lunch too!

-*** husband brought home surprise dinner take out.... it was nice to have dinner made after painting for 5 hours, but still :( KILLED my no eating out goals....

We've been making pasta from Giuliano Hazan's pasta book lately - all super simple and delicious. Last night was spinach & ricotta penne. Yum!

 

Tonight was rice noodles, fresh veg platter, fried tofu & Vietnamese sauce - everyone mixed their own.

 

Tomorrow: more Hazan. Either his lemon or gorgonzola spaghetti (both have cream in them - heavenly!) with leftovers from the veg plate made into a salad, most likely.

 

Also on the menu for this week: tortilla soup and quesadillas OR bean tostadas, the spaghetti dish we don't make tomorrow, possibly Thai red curry soup.

Really starting to look again at how often we eat red meat. We tend to lean toward it, so I am trying to be sure to mix it up enough during the week. Working to add more fish to our diet as well. Not my favorite, but the rest of the family loves it. Next week we will be eating out several times (planned). Trying to keep things at home all week.


In for my weekly check up! Followed the plan exactly M-R, but didn't make the squash (again). Friday we caved and ordered pizza. Saturday we turned the leftover pork into quesadillas with fresh cilantro and some pepper jack cheese. They were easy & fantastic. So, I am okay with last week. I don't have a regular work schedule, because I substitute in the schools. Last week I ended up working everyday. So, I am really glad that the only day we ate out was the pizza order on Friday. Feel like I am improving!

 

Not so good on the adding seafood this week though....

3/15 Dinner out (ds bday he chose to go out to the local family diner)

3/16 black bean & sweet potato chili, grilled pepper jack cheese sammies, fruit

3/17 Dinner out several neighbors (St Pattys day tradition)

3/18 Dinner at friends house, (bringing an appetizer)

3/19 Dinner at different friends house, (bringing a side dish)

3/20 spaghetti & meatballs, green salad, green beans

 

I only count the dinner at restaurants as eating out, so we have 2 on the schedule this week both planned ahead.
