Gluten Free Vegetarian Ideas

Hi,

 

I'm going to try my daughter (and me since I'm nursing) on a gluten free diet. Any ideas for recipes, food substitutions, etc.

 

I think the hardest thing will be eliminating the bouillon paste I use. It makes our food (soups, gravy, main dishes, etc.) so yummy. But it contains soy sauce. I'd love a cost-effective substitute. 

 

I figure I'll use braggs as a substitute for soy sauce.

 

Any good cookbooks out there?

I've complied my own little cookbook with gluten free corn free soy free vegetarian recipes I've collected.  I could email it to you maybe?  Its a large file.

Great cookbooks:

The Gluten-Free Vegetarian Kitchen by Donna Klein

Gluten-Free Recipes for the Conscious Cook (all vegetarian too) by Leslie Cerier

And check out the website for Book of Yum

 

If you can eat dairy, you'll have a lot of options.  If you don't eat dairy, I think it gets tougher.  You can also sub wheat-free tamari for the soy sauce.  We aren't total vegetarians here but here are a few of the GF veg meals we've had lately:

 

Shittake soup with cashew cream (in 2nd cookbook)

black bean enchiladas (use corn tortillas--the recipe came from 1st book)

Mushroom and cheese buckwheat (it's GF) crepes (recipe from website)

GF pasta with pesto sauce

crustless spanakopita (there's also a good GF crust at Whole Foods)
