I made these yesterday, and - as with every other time I make them to share - my friend requested the recipe. I came here to get it, from an old thread. Found the thread locked. So I thought I'd share it again for anyone who hasn't tried it yet.

(Leave out the chocolate chips for still yummy but completely sugar-free cookies.)

Oatmeal Chocolate Chip Flaxseed Meal Cookies
Preheat oven to 350 F
Mix together in a small bowl:
1 cup whole wheat flour (I use spelt flour, which requires a bit more than 1 cup)
1/2 tsp baking soda
1 tsp cinnamon
1/4 cup flaxseed meal
1/4 tsp saltÂ
Cream together in mixer:
6 Tbsp. butter, softened
1/2 C maple syrup or honey/maple syrup comboÂ
Add to creamed mixture, beating until well blended:
1 egg
3/4 t vanillaÂ
Add dry stuff to wet stuff, mixing only until combined.
Then stir in:
1 1/2 c thick-cut oatmeal
1/2 c chocolate chips

Form into hockey pucks, bake until they're almost set. Maybe 10-12 minutes.
