I just had leftover pasta salad and potato salad.  And some cherries, and a mango...

We had friends over for a BBQ on Sunday, and they told DH and I "you guys make vegan food look so appetizing!"

I swear, they think we just sit around and eat grass.

Ooh, just remembered that I took pics of our BBQ!

I am going to make tortillas with mung beans. The beans have been soaking since midnight. I keep eating them out of the water. They are so good.

Here is the tortilla recipe if anyone wants it:

I don't really have a recipe.  I just  make it like my mom does, but using Vegenaise instead of mayo.  Potatoes, celery, onion, relish, vegenaise, salt, pepper... paprika if I have it.

I love reading this thread! I'm more of a lurker, but anyway I just ate a bowl of pasta salad made with semolina-vegetable rotini, broccoli, kalamata olives, cherry tomatoes, grapes, scallions, and a little olive oil and salt. I don't think salad ever needs dressing if it has kalamata olives in it!
